|Description||Position Skill Summary: Central Kitchen Mgmt. position requires strong leadership, motivational, organizational, time management and cooking skills. This position is responsible for organizing, supervising and participating in baking, food preparation/production and packaging for distribution to our retail food cafes. The Kitchen Manager Central Kitchen Manager Position responsibilities and expectations include: I. Management Responsibilities (A) Maintain MCT, State & County Health Safety Standards. (B ) Consolidate Daily CafÃ© Requisitions into Shift Work Assignments (C) Delegate and Supervise Shift Assignments (D) Facilitate all Production, Packaging and Labeling Quality Controls (E) Monitor and Maintain Dry, Refrigerated and Frozen Food Storage Areas including completing temperature control logs and waste reports. (F) Ensure Stocking and Storing food products according to FIFO procedures. II. Food Preparation (A) Follow all Montana Health Department Standards & MCT rotation, labeling, temperature and handling standards. To be certified with passing grade in Serve Safe via FVCC as scheduled and sponsored by MCT. (B) Fully skilled in all basic cooking methodology. (C )Participate in food production responsibilities throughout the shift working with associates in hands on supervisory position. (D) Consolidate Daily CafÃ© Food Requisitions for Production (E) Organize, Delegate and Supervise Work Shift Assignments (F) Reconcile Daily CafÃ© Requisitions, Central Par Stock and Food Ordering (G) Monitor and Maintain Dry, Refrigerated and Freezer Storage according to Sanitary Standards. (H) Be able to lift and move a minimum of 30# (I) Maintain MCT Culinary Dress Code Standard (J) Safe Knife Handling and Equipment Operation III. Human Resources (A) Participate with Food Sales Coordinator in Development and Review process of Central Personnel (B) Foster a positive working environment and team morale. (C ) Conduct Ongoing Technical Training and Team Building Dynamics (D) One on One and Team Coaching IV. MCT Corporate Proficient Knowledge of MCT Scope of Coffee Operations to include the following Coffee Education: - Coffee 101 - Espresso 101 - Intro to Cupping - Coffee Seminars: Flavor, Roasting, Blending - Energizing Service & Energizing Sales V. Communication (A) Create open communication standard within Central Team and with CafÃ© Mgmt. Teams. (B) Relay information to coworkers in an appropriate manner. THINK before you speak.
